Herb Butter Sweet Corn & Green Bean Side Dish Recipe

There’s something so simple & easy, yet healthy & delicious about this side dish recommendation from the table of one of our very own Selmi’s employees!
We’re pairing our “un”official food of the summer (sweet corn) with fresh green beans from our mobile farm stand for this side dish – ready to accompany any protein of your choice like chicken or steak!
Pro tip - double the batch depending on your household size & prep this for the week ahead to always have a nutritious side at the ready.
What you’ll need:
1/2lb fresh green beans (any variety)
4 ears of Selmi’s sweet corn (shucked)
5 Tbs butter (salted or unsalted)
Salt & Pepper
Fresh or dried herbs of your choice (finely chopped)
Recommendations include: basil, thyme, chives, rosemary, chervil, tarragon, marjoram and/or parsley
Instructions:
Drop your green beans into a pot of boiling salted water for 2 minutes & prepare a large ice bath on the side. After boiling, scoop out green beans and transfer to the ice bath for a nice tender crisp.
With the same pot of boiling water (we love that), add your ears of corn, turn the stovetop off & let heat for about 5 minutes.
Drain & add corn to the existing ice bath. Once completely cooled in the ice bath - drain & let dry. Cut your corn off the cob.
Begin heating a skillet or sauté pan (your choice) with butter and add your veggies till warm. Salt & Pepper while keeping them moving with your spatula to evenly distribute the butter.
Right before serving, sprinkle % of the herbs over the vegetables, then toss to evenly incorporate. Garnish with additional herbs and/or carry the herbs to your main protein you’re serving beside. Voila!
