Made with our very own Selmi’s Unpasteurized Apple Cider, these blondies are rich, chewy, and full of orchard-fresh flavor. Every bite tastes like a fall stroll through Selmi’s orchard.
Here’s the blondie ingredients you’ll need:
Blondies Recipe:
2 cups Selmi’s Unpasteurized Apple Cider
1 cup (2 sticks) unsalted butter, melted
1 ¾ cups light brown sugar, lightly packed
2 large eggs, room temperature
1 large egg yolk, room temperature
1 ½ teaspoons vanilla extract
2 ½ cups all-purpose flour
2 teaspoons cornstarch
1 teaspoon baking powder
1 teaspoon kosher salt
Spice Topping Recipe:
⅓ cup granulated sugar
1 teaspoon ground apple pie spice
Apple Cider Blondie Instructions
Reduce the cider: In a small saucepan over medium heat, cook Selmi’s Unpasteurized Apple Cider for 20–22 minutes or until reduced to about ¼ cup. Set aside to cool slightly.
Preheat the oven: Heat to 350°F (175°C) and line a 9×9-inch baking dish with parchment paper.
Mix the wet ingredients: In a large bowl, whisk together melted butter and brown sugar until smooth. Add eggs and yolk one at a time, whisking well after each addition. Stir in vanilla and the reduced cider.
Combine the dry ingredients: In a separate bowl, whisk together flour, cornstarch, baking powder, and salt. Gently stir into the wet mixture until fully combined.
Add the topping: Pour batter evenly into the prepared pan. Mix granulated sugar and apple pie spice together, then sprinkle evenly over the top.
Bake: Bake for 35–38 minutes, until edges turn golden and the center is set. Let cool completely in the pan before cutting.
