Grilled Corn & Watermelon Summer Salad Recipe

Looking for a refreshing summer side that’s bursting with flavor? This Grilled Corn & Watermelon Salad brings together juicy watermelon, smoky grilled corn, crisp cucumbers, and creamy feta for a vibrant dish perfect for barbecues, picnics, or light lunches. With simple ingredients and a quick prep, it’s a colorful way to make the most of summer’s best produce.


What you’ll need:

  • Watermelon

  • Salt & Pepper

  • 4 ears of Selmi’s sweet cornOlive oil

  • Cucumbers (sliced or chopped)

  • Scallions (sliced)

  • Basil (chopped)Feta cheese (crumbled)


Instructions:

After slicing your watermelon into bite sized chunks, place the watermelon in a colander and toss it with 1/2 teaspoon salt. Let it sit and release its juices while you grill the corn.


Rub the corn with olive oil prior to placing on the grill - turning occasionally, until lightly charred, about 5–7 minutes. Let the corn cool slightly before slicing the kernels off the cob.


In a large bowl, stir together the watermelon (drained of its juices), corn kernels, cucumbers, scallions, basil, and feta. Season with salt and pepper to taste.


Store any leftovers in an airtight container in the refrigerator.
