Apple Harvest Salad with Green Goddess Dressing Recipe

The U-Pick season may be behind us, but there’s so many delicious and nutritious ways to incorporate apples into our diet…don’t make us state the obvious “An Apple a Day Keeps the Doctor Away.”
Anywho, while we’re typically grabbing for a McIntosh, Rosalee, or Honeycrisp from our list of varieties, feel free to get creative or simply use what you have…we’re sure it’ll still taste terrific!
Perhaps the most “difficult” part about this apple salad is making the dressing from scratch, although (you didn’t hear it from us) you can find Green Goddess dressing at the store.
Here’s the salad ingredients you’ll need:
Apple Harvest Salad Ingredients:
Kale or arugula or a a spring mix
If using kale, don’t forget to massage it till the cows come home while washing
McIntosh, Rosalee, or Honeycrisp Apple
Sweet potato
Feta crumbles
Dried cranberries
Avocado
Your choice of nut: pine, walnut, pistachio or pecans will all work
Depending on the nut, consider crushing them up into smaller pieces
[optional] Chicken
Depending on if this is a side or a main, add protein as you see fit
Green Goddess Dressing Ingredients:
Greek yogurt
Avocado
Tarragon
Fresh herbs of your choosing -chives, green onion, basil, parsley, cilantro, dill and/or mint
Garlic
Salt & Pepper
Wash your greens of choice and pat dry.
Slice your sweet potato into bite sized pieces and pan or oven roast in olive oil, seasoned with salt & pepper, until they’ve reached a desired char. Let cool.
Julienne cut your apple (smaller, but long, skinny pieces).
Make your green goddess dressing by combining ingredients listed above in a food processor. If you don’t have one - consider buying a Green Goddess dressing or similar at the store.
Once your sweet potatoes have reached room temp, assemble your salad in a large bowl and toss with dressing. Incorporate this simple salad recipe for lunch or dinner.
