Ingredients (Sugar Free Banana Loaf)

  • 1/2 cup extra-virgin olive oil, divided

  • 2 eggs

  • 4 very ripe bananas, mashed (about 2 cups)

  • 1 teaspoon baking soda

  • 1/2 to 1 teaspoon kosher salt (see note)

  • 1 teaspoon cinnamon

  • 1 teaspoon vanilla extract

  • 1/2 cup whole wheat flour

  • 1 cup all-purpose flour


Sugar Option

  • Option A: Natural Sweetener: Add 1/4 to 1/3 cup honey or pure maple syrup to the wet ingredients. Reduce banana ingredients to 3.

  • Option B: Brown Sugar: Add 1/3 cup packed brown sugar to the wet ingredients. Reduce banana ingredients to 3.

This sugar free loaf is not dessert sweet. It is gently sweet and perfect for breakfast. If you want extra sweetness, use one of the sugar options above.


How to make healthy banana bread recipe (Step by step)

  1. Heat oven to 350°F. Use about 2 tablespoons of the olive oil to generously grease a loaf pan.

  2. In a large bowl, whisk the remaining olive oil with the eggs until smooth.

  3. Stir in the mashed bananas.

  4. Add baking soda, salt, cinnamon, and vanilla. Mix until combined.

  5. Fold in the flours until you do not see dry patches. Do not overmix.

  6. Pour into the pan and bake 50 to 60 minutes, until a toothpick in the center comes out clean.
